Prickly pear has a color and flavor that seem like nature designed it with cocktails in mind. In the southwest, it’s been used that way since at least the nineteenth century. Tequila is the most natural match for this desert fruit.
1/3 cup tequila
2 tablespoons Prickly Pear Syrup (page 78)
1 tablespoon freshly squeezed lime juice
Ice, as needed
1/3 cup seltzer
Lime wedge, for garnish
In a cocktail Prickly Pear Margarita shaker, combine the tequila, prickly pear syrup, and lime juice, and shake vigorously. Strain into a glass over ice. Top with the seltzer, and garnish with a lime wedge.
