Cinnamon Syrup


A touch of sweetness with a blast of cinnamon makes for a refreshing soda. And when the syrup is finished, I’ll reuse the cinnamon sticks by dropping them into a bottle of seltzer water and letting it sit for 12 hours for an oh-so-subtle cinnamon water.

1 1/2 cups water
4 to 5 cinnamon sticks
3 tablespoons agave syrup

In a medium pot, combine the water, cinnamon sticks, and agave. Bring to a boil over high heat, and stir to dissolve the agave. Let boil for 5 minutes, then remove from the heat. Let the syrup cool, leaving the cinnamon sticks in the syrup to continue to flavor it. Refrigerate with the cinnamon sticks in a covered container for up to 2 weeks.

To make Cinnamon Syrup: Stir 2 tablespoons Cinnamon Syrup, or to taste, into 10 ounces (1 1/4 cups) seltzer.
