KOZI PANIYARAM

Ingredient:

Batter: 1. Parboiled Rice/ Idli Rice- ½ cup

2. RawRice (or Rice flakes) – ½ cup

3. Urad dal – ¼ cup,  

 4. Fenugreek seeds- ¼ tsp

5. Salt – to taste

For Seasoning: 

1. Onions- 2 (chopped)

2.  Green Chilies – 4 (chopped)

3. Curry leaves

4. Grated Coconut – ¼ cup

5. Urad Dal-1 tsp

6. Chana Dal -1 tsp

7. Mustard Seeds- 1 tsp

8. Oil – 1bsp

Method for making Batter:

1. Wash and soak the rice together and the urad dal with the fenugreek seeds in a separate bowl for about 2 hours. 2. Grind it to a smooth paste. 3.  Ferment the batter for about 6 hours (or overnight) till the batter doubles in volume. Now the batter is ready to make Paniyarams.  You can store it in the refrigerator and make it later too. Add Salt to Taste whenever you want to make paniyaram.

Method for making Paniyaram:

1. Add oil to a Kadhai; make a tempering with Mustard seeds, Chana dal, Urad dal and Curry leaves. 2. Add the Chopped onions, green chilies and grated coconut to the batter. For healthier Option add grated vegetables to the Paniyaram and Mix Well 3. Heat the Kozi Paniyaram pan.  Drizzle few drops (about ½ tsp) of Desi Ghee (clarified butter) in each mould. 4. Pour a spoonful of the batter in each mould; let it cook for a minute. 5. using a wooden stick or with a fork, gently flip each Paniyaram so that it will cook on the other side. 6. You can cover with a lid to ensure it is cooked properly.  7. Cooking on medium low flame gives the best results. Tasty Kozi paniyaram is ready to be served. 8. Served hot with Sambhar/Choice of Chutney/ Choice of Pickle.
