Orange-Cream Syrup

YIELD: ABOUT 1 1/2 CUPS

This dreamy drink takes me back to my childhood, sitting on the back porch eating a couple orange Creamsicles (because who can stop with just one?). This magical drink is my recreation of the classic Popsicle flavor.

Grated zest of 1 orange
2 cups freshly squeezed orange juice or store-bought orange juice with extra
pulp
1/2 cup raw cane sugar
1 1/2 cups vanilla ice cream

In a medium pot, combine the orange zest and juice, and the sugar. Bring to a boil over high heat, and stir to dissolve the sugar. Let cook until reduced to 1 cup of liquid, 8 to 10 minutes. Remove from the heat, and add the ice cream to the warm liquid to melt. Let cool, and refrigerate in a covered container for up to 3 days.

To make Orange-Cream Syrup: Stir 1/4 cup Orange-Cream Syrup, or to taste, into 6 ounces (3/4 cup) seltzer.
