1 tablespoon Pineapple Syrup (page 76)
1/4 cup rum
1/4 cup coconut milk, shaken well
1/2 cup seltzer
In a large glass, stir together the pineapple syrup, rum, and coconut milk to combine. Top with the seltzer, stir, and serve Creamy Piña Colada.
