1 8-ounce bag microwaveable farro (such as Simply Balanced)
½ cup fresh cranberries, chopped
2 teaspoons sugar
½ cup chopped mixed fresh herbs (such as parsley and chives)
Extra-virgin olive oil, for drizzling
- Cook the farro as the label directs. Transfer to a large bowl.
- Toss the cranberries with the sugar; mix into the farro along with the herbs. Season with salt and drizzle with olive oil.
